Only the best will do

In order to produce the best quality fish and chips we only buy the best quality supplies. All of our products are of the highest quality and we spend over two hours every morning preparing our ingredients for the day.

All our haddock is MSC certified, Icelandic frozen at sea, as we believe this is the best quality fish available and produces the freshest and best tasting product. It is boned and portioned on the premises every morning. It is sustainably sourced from managed fishing grounds so we can protect the stocks of fish for years to come. We also sell wholetail scampi as an alternative.

Our haddock, fishcakes and scollops are all cooked in our homemade batter which is made fresh every day to our own secret recipe.

Our chips are freshly made offsite by PG Chips in Bury. They are expert potato merchants, and source the very best chipping varieties of potatoes, depending in the season, and produce chips in exactly the same way as we used to do in the back of our shop, but on a much larger scale. This had the advantage of being more environmentally friendly as it uses far less water, and all the waste produced is recycled rather than simply going down the drain. They are delivered to us five or six days a week in vacuum packed bags. Once cooked our chips are crisp on the outside and soft and fluffy on the inside. They are thick cut chips as this creates a healthier product for our customers.

We care about the provenance of our ingredients and we know you do too, so every week we display the origins of our haddock and potatoes in our shop. When you visit you’ll be able to discover what the variety of potatoes we are using, where they were grown and where the haddock was caught and by which trawler.

Our fish and chips are fried in the finest quality refined and deoderised beef dripping, which gives our food that great traditional Yorkshire fish and chip taste. We can also cook some of our menu items to order in vegetable oil. See our menu page for details.

Our fishcakes and scollops are homemade each morning on site.

Our peas are soaked overnight and cooked fresh each morning so we can give our customers old fashioned, real mushy peas.
We serve our fish and chips in Bio Boxes. They are made from Bagasse, a byproduct of sugar cane, and are compostable. They keep your fish and chips in as perfect condition as possible. The steam and moisture generated by the hot food is absorbed into the actual box material and this means that the batter stays crisp and the chips do not become soggy.
